Appreciating the Earth @ School

This post is from Thursday, but I just got time to put it on. Enjoy!
My day stared out great, with an early breakfast before class at The Oaks in Oaji, which I am
completely obsessed with, it is so pretty I wish I could
spend more time here.

They offered this amazing buffet below, along lots of other options.

I stole a few fruits from my sister, but in the end decided to order the granola with soy milk, which was delish in it's own right. I also tons of coffee to. My mom ordered the brioche with arugula.

Afterwards I went to class and was sooooo surprised that they were celebrating earth day and having vegan options in the cafeteria. Although I love my school, I have to be honest and say that vegan options here are VERY limited, thus to say I was very impressed today. I practically ran to the cafeteria even though I wasn't hungry yet. This is what I got after much deliberation...
It was super yummy, and the sauce was surprisingly creamy. I thought it was a bit pricey though personally.

Also check out this locally grown, organic tangerines they had. Love the display.

Later on I grabbed a coffee from Starbucks (venti iced coffee w/ SF hazelnut & soymilk; notice very large ring & akward pic in my car ) and had this sliced fuji apple doused in nooch as a snack.

Pictures of my fun night to come in the next post...
